FOR THE CUPCAKES:
Mash 2 bananas in a bowl.Add 2 eggs and continue to mix, then mix in 1/3 cup maple syrup, 1/4 tsp of salt, 2 tsp baking powder, 2 tsp vanilla extract, 1 tbsp Cinnamon, 1 cup of Greek Yoghurt (I used Fage as I always do!) Mix these ingredients in thoroughly then add in 3 cups of oats and mix, then mix in 1 cup of milk (I used almond milk).
Spray a cupcake tray or use silicone cases as I did and bake in the oven for 30 Minutes at 180c or 350f.
This batch gave me 16 cupcakes and don’t forget you can top them before cooking them which will make a beautiful addition to the cupcake. Top with either dried cranberries/dates, chopped apple, blueberries or nuts. Go crazy! Make them lovely.
